Apple Cheddar Beef Pies

Bon Appetit has some great ideas for how to use beef. This week I tried apple cheddar beef pies.
My freezer has more ground beef than any other ingredient. I buy it in bulk because of the cheaper cost per pound, but we can only eat so many tacos. My ideas for how to use ground beef are obviously limited.
Mexican dishes come to mind more than anything else. Then shepherd’s pie, followed by meatloaf, meatballs and Hamburger Helper. But what else can I do with these frozen, 1-pound balls of red meat?
A few months ago I found a link for Bon Appetit’s 10 things to do with beef slideshow. What a brilliant idea.

I saved the link to my email and finally got back to it this week. The sound of apples with cheese and ground meat was the most appealing to me. Cook it together and spoon the ingredients into a rolled out sheet of store bought pizza dough. If you would rather make your own dough, be my guest. But if you buy the ready-to-use dough, divide it into four sections before rolling it out.
Each sheet of dough is stuffed with the filling, folded over and pricked until closed with a fork. Bake at 425 for about 20 minutes, although mine took about 10 until they were golden brown. Keep an eye on those little balls of yumminess.
Will, lover of all hot sauce, considered sprinkling on Tabasco. However, he’s watching his sodium. I served it with a side of broccoli in a light cheese sauce. One suggestion: try other meats. I can see this doing really well with a ground sweet pork or chicken sausage. Everything oozes out when these pockets are sliced, so watch out. The cheesy, sweet apple and clumps of beef will tumble all over the counter.
Recipe for apple cheddar beef pies:
Cook ground beef and chopped onion until the onion is softened and the beef is no longer pink. Toss with chopped apples and shredded cheddar cheese. Divide a store-bought frozen pie crust into quarters and roll out to make four rounds. Top each round with the beef mixture, brush the edges with water, then fold over, crimping to enclose.
